Homemade Vegetable Broth
* I keep all the discards from the veggies I cook with and freeze them. When I have collected enough ( I had way to much this time around) I boil them down and make homemade veg broth. Its good for up to 3 days in the fridge or 6 months frozen. But if your freezing make sure you use proper jars that can be frozen or they will explode…yup made that mistake before :-P Another way to freeze is pour into ice cube trays and pop a couple out when needed. Simple and effective not only are you saving money by reusing what you would normally throw out but you have total & complete control over the sodium…sodium free never tasted so good!
